The quantity training kitchen with 10 working stations provides hands on practical training in quantity cooking, emphasizing on the mixing & combining of ingredients in right proportions for large quantities, rectification of errors during cooking to avoid wastage and to introduce the students to Indian Regional Cuisines with special
emphasis on authenticity, ethnicity and cultural linkages.
Basic Training Kitchen
This kitchen is desgined with 6 working stations to emphasize the importance and practice basics of cookery and appearance, garnish, presentation skills and eye appeal in order to make the food look presentable and is also equipped with the modern kitchen gadgets and equipments for students.
Bakery & Confectionary
This lab imparts training in baking and confectionery, it is equipped with the latest types of ovens and
confectionery equipment. A hot kitchen aids in the grooming of students into skilled bakers, confectionery artists and pastry chefs.
The School of Hospitality and Tourism has a fully functional training Restaurant for 45 covers and mock bar which provides a platform for the students to hone their food and beverage skills. They are given inputs on classical wine service along with various styles of food service. The emphasis here is on style, presentation & sophistication in service.
Front Office Lab
A mock front desk, bell & travel desk helps students to simulate front office Environment. Front office
lab provides students with inputs on the front of the house operations; there is a state of art fully functional reception area, with a dedicated front desk, lobby desk and guest seating area.
SoHT has a well equipped housekeeping dry lab. Housekeeping is the department that deals essentially with cleanliness and all ancillary service attached to that. To make these housekeeping practical's as realistic as possible, there are model rooms similar to that of any star rated hotel.
